Paul Lato 2021 Big Sur Pinot Noir

Winery Notes:

Santa Lucia Highlands and Santa Maria Valley are perfectly suited growing regions for Pinot Noir, marked by morning fog, abundant sunshine, and constantly cool afternoon wind. These afternoon winds moderate the pace of photosynthesis and prevent the abundant morning sunshine from rushing the grapes along. While budbreak is early, the fruit matures slowly to full phenolic ripeness in late September or October due to the cooling winds and fog from the ocean. The result: rich, silky, and vibrant wines that are delicious at release and able to go the distance in the cellar. This wine was made from Pisoni and Solomon Hills vineyards and was fermented without stems for 16 months in 35% new French Oak.
