When it comes to the wine production, the grapes are carefully handpicked during the night. They undergo fermentation using indigenous yeast and a combination of 50% whole clusters and 50% de-stemmed grapes in large French oak barrel fermenters. Gentle extraction is achieved by rolling the barrles to break up the caps. After that, the wine matures for a duration of 10 months in used French oak barrels before being bottled unfined and unfiltered.
